Workshops, with tickets
Create an event over one day or several, with per-day times and locations, a cover image, a capacity and a price. Members buy tickets in the app. If you have to move it, everyone is told and anyone who cannot make the new date gets refunded; if you cancel it, the refund list is already filled in for you.

Cancel it outright and the same list appears, with everybody on it.
One-to-one, without the back and forth
Set a service with a session length and the hours you are actually available, including the days you are not. Members book a slot themselves and pay for it, and if you need to move one you propose a new time rather than cancelling. Blocking out a holiday shows you what it affects before you confirm it.
Sessions of 30, 60, 90 or 120 minutes. Block a week out and it shows you what that affects before you confirm.
A shop that knows its stock
List merchandise with sizes and colours and per-variant stock, or a digital file delivered on purchase. Set a compare-at price, track inventory, and work through orders in a pending, fulfilled and refunded list. Refunds can put the stock back on the shelf.
Checkout blocks the sale the moment a variant hits zero, unless you allowed overselling, and your staff get a notification when something sells out.
